The Best No Chill Sugar Cookie Dough Recipe

INGREDIENTS

1 cup butter, at room temp

1 cup granulated sugar

1 egg, at room temp

2 tsp baking powder

1.5 tsp vanilla extract

3 cups AP flour

INSTRUCTIONS

Preheat oven to 350F. Add butter to a large bowl or into the bowl of a stand mixer fitted with a paddle attachment. Using a hand held mixer or a stand mixer, beat butter over medium speed and add sugar in a slow steady stream. Continue to beat butter and sugar togther until the ingredients are light and fluffy (takes approximately 1-2 minutes). Add the egg to the butter and sugar and continue to mix ingredients over medium speed until the egg is combined. Add in baking powder and vanilla. Turn mixing speed to low, and add in AP flour 1 large spoonful at a time. Continue to mix, until dough resembles the consistency of SOFT Play-Doh and is pulling away from the sides of the bowl. Pat the dough into a large disc and do not chill.

Add dough disc to a lightly floured surface. Using a lightly floured rolling pin, roll out dough to about 1/4” thickness. Using cookies cutters or the top of a cup or glass, cut out sugar cookies and place them on a baking sheet fitted with a silpat or a piece of parchment paper, leaving a 1” space in between the cookies. Re-roll dough and repeat this process until all the dough is cut into shapes.

Bake cookies one sheet pan at a time at 350F for 10-13 minutes or until edges are set. Remove cookies from the oven and allow them to cool on the pan for 2 minutes before carefully transferring them to a wire rack to cool completely. Once cool, store cookies in an airtight for container for up to 1 week.

Recipe notes: While these cookies are delicious on their own, they can also be decorated with icing. I like this recipe because the cookies hold their shape during the baking process. You can hand mix your ingredients in a large bowl with a large spoon or spatula. Hand mixing works well, but note that it may take longer for the dough to come together.
