Strawberry Pie Recipe

FOR THE CRUST
1 sleeve of saltine crackers
6 tbsp butter, melted
2 tbsp granulated sugar
1 egg white
FOR THE FILLING
1 cup water
1 cup granulated sugar
3 Tablespoons cornstarch
¼ cup strawberry gelatin powder (JELL-O)
1 pint fresh strawberries (tops removed and sliced into quarters)
INSTRUCTIONS
Preheat oven to 350°F. Stir together crushed crackers, melted butter, sugar, and egg white in a bowl until combined. Transfer mixture to a 7 in springform pan lined with parchment paper and sprayed with cooking spray. Firmly press mixture onto the bottom and sides of the pan to create a crust. Freeze the crust for 10 minutes.
Bake in preheated oven until crust is lightly browned, about 20 minutes. Transfer to a wire wrack to cool to room temp.
In a sauce pan, over medium-high heat, add water, sugar, cornstarch, and strawberry gelatin. Whisk together until thoroughly combined.
Whisk mixture constantly while heating to prevent clumping or scorching until mixture begins to come to a gentle boil.
Remove pan from the heat and allow the glaze to cool.
As the glaze cools it will become translucent in color and you should notice it will thicken a little more as well. Whisk it occasionally as it cools. It should be thickened but still pourable.
Add sliced strawberries to the baked and cooled pie crust. Pour strawberry glaze over berries.
Chill pie in the refrigerator at least 4 hours or overnight before slicing and serving.
Recipe Notes: This pie can be made in a traditional 9in pie plate sprayed with cooking spray. If you make it in a pie plate, do not line the bottom of the plate with parchment paper.
