Whipped Feta Dip

On Friday nights, cooking dinner is a family affair. We like to unwind from our week by listening to music and preparing dinner, usually outside on the grill this time of year. Nibbling is a must while we pull our meal together, so I'm always on the lookout for quick, easy appetizer recipes. Last night I prepared Mediterranean inspired appetizers for us to graze on. If you're a feta cheese fan, try making this easy whipped feta dip. The honey in the dip provides balance to the tanginess of the lemon and feta. This dip pairs well with pita bread or pita chips and crisp veggies. It's oh so easy to make.

The dip is made with six simple ingredients that are staples in my kitchen: feta cheese, whipped cream cheese, olive oil, lemons, honey, and kosher salt. To get started, you will need to allow your crumbled feta cheese and whipped cream cheese to come to room temp. Once your cheeses are at room temp, take the crumbled feta and pulse it in a food processor until it's smooth. You will need to stop periodically and scrape down the sides of your food processor. If you don't have a food processor, this could be done in a blender or stand mixer with a whisk attachment.Now that your feta is processed and creamy, add the whipped cream cheese into your food processor and pulse until the cheeses are well blended. Last but not least, add in the juice squeezed from one lemon, 1/4 cup of honey, 1 tablespoon of olive oil, and 1/4 tsp of kosher salt. Pulse until all ingredients are fully combined. This dip can be served immediately, or it can be refrigerated before serving (I prefer to chill mine). 

To complete our spread, I roasted almonds with rosemary clipped from my rosemary plant and made marinated olives. The almonds and olives are wonderful to keep on hand and pull out for quick appetizer options if you like to entertain.
