Salmon Croquettes

I don’t know about you, but I love a simple 3 ingredient recipe. Salmon croquettes, also known as, salmon patties are made with one sleeve of saltine crackers (crushed), 1 egg, and 1 can of salmon (drained, deboned, and skin removed). My mom made salmon croquettes when I was growing up, and now I make them for my family.

There's really not much to making this recipe for salmon croquettes. I use my hands to mix my ingredients together. I would recommend wearing rubber gloves while you mix your ingredients together to form patties. 

Also, I would highly recommend frying salmon croquettes outside. Let's just say, they're fragrant as they cook. I use an electric skillet that can easily be transported outside for cooking. Once my salmon croquettes are golden brown, I  use a spider to remove them onto paper towels to drain. Canola oil is my choice oil for frying salmon croquettes. 

This recipe is a staple at our home, especially on Fridays during lent. I love dipping my salmon croquettes in ketchup, BUT this recipe for Food and Wine's Dill Sauce is a must try if you plan to serve these as an appetizer. Yield 18 to 20 croquettes

Ingredients

  • 1 sleeve of saltine crackers, crushed
  • 1 egg
  • 14.75 oz can of salmon (drained, deboned, and skin removed)

Instructions

  1. In a large bowl, combine crushed saltines, egg, and salmon. Using your hands or a spatula, mix the ingredients until fully combined. Form salmon mixtures into 2.5” round croquettes.
  2. Fry croquettes until golden brown, about 5 minutes per side. Carefully remove croquettes from the skillet and placed on a paper towel lined plate. Serve immediately.
