Funfetti Butterscotch Blondies

Need a new dessert bar recipe?? Say hello to my newest recipe, Funfetti Butterscotch Blondies!! Similar to the Neiman Marcus Bars I posted about recently, this dessert bar is made up of three DELICIOUS layers. The first layer is cakey, the middle layer is comprised of butterscotch chips and rainbow sprinkles (I used jimmies this go-round), and the top layer is reminiscent of a chess square’s flaky/gooey top layer. Not a fan of butterscotch? Sub in your chip of choice on the middle layer. Dessert bars feed a crowd, travel well, and are easy to make. In fact, I was able to throw this blondie recipe together before my oven even had time to preheat. These blondies bake in less than an hour in an oven preheated to 350 degrees Fahrenheit.

For the first layer, you will need a box of yellow cake mix, a stick of butter softened to room temp, one egg, and ¼ cup of rainbow sprinkles. In a bowl, mix these four ingredients together until the consistency resembles yellow play-doh with sprinkles (silly description I know, but it’s the best way to describe the consistency). Press your mix into the bottom of a 9x13 pan that’s sprayed with cooking spray. I have baked this in a 9x13 glass Pyrex dish and 9x13 metal cake pan, both with great success.

A completely optional but not necessary step is to line your pan with 2 sheets of parchment paper leaving a 2 inch overhanging on each side of the pan. From there, I spray my parchment paper with cooking spray.  If you want to pull the bars out of the pan in one sheet before cutting and serving, the parchment paper serves as an elevator for this process. No parchment paper, no problem, just skip step and be sure to spray your 9x13 pan with cooking spray.

For the second layer, you will need a 12oz bag of butterscotch chips. Spread the butterscotch chips evenly over the first layer and gently press the chips into the first layer. An optional step is to sprinkle additional sprinkles onto this 2nd layer for an extra pop of color.

For the third and final layer, beat 8oz of cream cheese softened to room temp., 2 eggs, and 1 tsp of vanilla until well combined. Continue beating and slowly add in 4 cups or 1 box of sifted confectioners sugar one large spoonful at time. Mix all these ingredients together until a smooth consistency forms, leaving very little to no lumps in the batter. To avoid lumps, make sure your cream cheese is soft and your confectioners sugar is sifted. Pour this smooth batter evenly over the butterscotch chip layer. This is my favorite layer of the bar because it bakes into this flaky, gooey layer of deliciousness. At the 40 minute mark, I check to see if the top layer is set. If it is not quite set, I add 5 minutes baking time. Once the edges of the blondies turn golden brown and the top layer of the blondies are set, pull them from the oven to cool for at least an hour before serving.

I hope you will enjoy this recipe for Funfetti Butterscotch Blondies! I tend to enjoy all things funfetti, so I thoroughly enjoyed creating this recipe. Butterscotch is a flavor I don’t bake with often, BUT I’m never disappointed when I use it in a recipe. These bars taste great on their own, or served warm with vanilla ice cream. Funfetti Butterscotch Blondies

1 box of yellow cake mix

3 eggs

1 12 oz bag of butterscotch chips

¼ cup rainbow sprinkles, plus extra

8oz cream cheese, softened to room temp

1 tsp vanilla

1 16oz box or 4 cups of confectioners sugar, sifted

Preheat your oven to 350 degrees Fahrenheit. Prepare a 9x13 baking pan or Pyrex dish by spraying it with cooking spray. *An optional step to preparing your pan is to add two layers of parchment paper with a 2 inch overhang on each side of your pan before finally spraying your pan with cooking spray.

For the first layer, mix together your dry cake mix ingredients (not a fully prepared cake mix), 1 stick of softened butter, 1 egg, and ¼ cup rainbow sprinkles until a yellow play-doh consistency forms. Press your mix evenly into the bottom of your prepared 9x13 pan.

For the second layer, spread your butterscotch chips evenly on top of the first layer. Gently press the chips into the top of the first layer. *If you would like to add additional sprinkles to this layer, go for it. It will add a pop of color to the middle layer.  

For the third layer, beat 8oz of cream cheese softened to room temp., 2 eggs, and 1 tsp of vanilla until well combined. Continue beating and slowly add in 4 cups or 1 box of sifted confectioners sugar one large spoonful at time. Mix all these ingredients together until a smooth consistency forms, leaving very little to no lumps in the batter. To avoid lumps, make sure your cream cheese is soft and your confectioners sugar is sifted. Pour this smooth batter evenly over the butterscotch chip layer.

Bake these bars for 40-45 minutes at 350 degrees Fahrenheit or until the edges are golden brown, and the top layer is set. Remove the bars, from the oven and allow them to cool for one hour before serving. Once the bars are cool, I cut them into squares.
